No-pork marvellous mustard medallions

Serves 2

½ onion, thinly sliced
1 clove garlic, chopped
1 tbsp vegetable oil
100ml vegetable stock
½ tbsp plain flour
1 tsp wholegrain mustard
1 tsp maple syrup
2 tbsps soya cream
fresh thyme sprigs
salt and pepper

  1. Add the oil to a frying pan over a low heat. Cook the onion until soft- at least 10 minutes.
  2. Add the garlic and cook until soft. Remove onions and garlic from pan, turn up heat, and fry the seitan until golden brown on both sides. Replace onions and garlic, and add the stock and thyme sprigs. Cook until reduced by half.
  3. Add the mustard and maple syrup. Stir through. Remove from heat, and add the cream, stirring to mix.
  4. Season with salt and pepper, and serve with basmati rice or saute potatoes.
